Apricot Banana Bread

Ingredients
  • 1/3 cup butter or margarine, softened
  • 2/3 cup sugar
  • 2 eggs
  • 1 cup mashed ripe bananas(2 to 3 medium)
  • 1/4 cup buttermilk
  • 1-1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup 100% bran cereal(not flakes)
  • 3/4 cup chopped dried apricots(about 6 ounces)
  • 1/2 cup chopped walnuts
Directions
  1. In a large mixing bowl, cream butter and sugar. Add eggs, mix well.
  2. Combine bananas and buttermilk.
  3. Combine flour, baking powder, baking soda and salt: add to creamed mixture alternately with banana mixture.
  4. Stir in bran, apricots and nuts.
  5. Pour into a greased 9-in x 5-in x 3-in loaf pan.
  6. Bake at 350 for 55-60 minutes or until bread tests done.
  7. Cool 10 minutes before removing from pan to wire rack.

Frozen Cranberry Banana Salad

Ingredients
  • 1 can(20 ounces0 pineapple tidbits
  • 5 medium firm bananas, halved lengthwise and sliced
  • 1 can(16 ounces) whole-berry cranberry sauce
  • 1/2 cup sugar
  • 1 carton (12 ounces) frozen whipped topping, thawed
  • 1/2 cup chopped walnuts
Directions
  1. Drain pineapple juice into a medium bowl: set pineapple aside
  2. Add bananas to the juice. In a large bowl combine cranberry sauce and sugar.
  3. Remove bananas, discarding juice, and add to cranberry mixture.
  4. Stir in pineapple, whipped topping and nuts.
  5. Pour into a 13-in x 9-in x 2-in dish. Freeze until solid.
  6. Remove from the freezer 15 minutes before cutting.
Makes 12-16 servings

Cream Cheese Cookies

Ingredients
  • 1 cup butter
  • 8 oz package cream cheese
  • 2 cups flour
  • 1/4 tsp salt
Directions
  1. Mix butter and cream cheese together, blend in flour and salt.
  2. Sprinkle baking board heavily with powdered sugar.
  3. Make dough to 1/8 thickness and cut into diamonds or whatever shape you desire.
  4. Bake at 350 for 10-15 mins

Carrot Bars with Cream Cheese Icing

Ingredients
  • 3/4 cup vegetable oil
  • 1 cup golden brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1/2 tsp allspice
  • 3/4 cup raisins
  • 1/2 cup chopped walnuts
  • 1 1/2 cups grated carrot, about 2 or 3 medium
  • Cream Cheese Icing
Directions
  1. Cream oil and sugar until smooth. Beat in eggs and vanilla. add remaining ingredients, stirring until smooth.
  2. Pour into greased 13x9-inch baking pan.
  3. Bake in 350 degree oven 30 minutes or until a pick inserted in center comes out dry.
  4. Cool, then spread with icing.Cut into 24 bars.
Cream Cheese Icing
  1. Beat 3 oz. cream cheese with 2 tbls butter until smooth.
  2. Beat in 1 cup powdered sugar, 1/2 tsp vanilla and enough milk to make icing smooth and spreadable (about 1/2 to 1tsp)

Layered Lemon Dessert

Ingredients
  • 1 cup cold butter or margarine
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
Second Layer
  • 2 8 oz packages cream cheese softened
  • 1 cup confectioners sugar
  • 1 cup whipping cream, whipped
Third Layer
  • 2 packages lemon pudding pie filling mix
  • 1 cup sugar
  • 4 1/2 cups cold water, divided
  • 4 egg yolks
Top Layer
  • 2 cups whipping cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
Directions
  1. In a bowl, cut butter into flour until mixture resembles coarse crumbs: stir in pecans.
  2. Press into an ungreased 13-in. x 9-in. x 12-in baking pan.
  3. Bake at350 for 15 minutes or until lightly browned. Cool on a wire rack.
  4. In a mixing bowl, combine cream cheese and confectioners sugar: mix well.
  5. Fold in whipped cream: spread over cooled crust.
  6. In a sauce pan, combine pudding mix, sugar, 1 cup water and egg yolksuntil smooth.
  7. Stir in remaining water. Bring to a boil over medium heat: cool.
  8. Spread over cream cheese layer.
  9. In a small mixing bowl, beat cream, sugar and vanilla until stiff peaks form: spread over lemon layer.
  10. Refregerate until serving

Glazed Banana Dessert

Ingredients
  • 4 Bananas, peeled and cut lengthwise
  • 4 tbs butter or margarine
  • 1/2 cup brown sugar
  • 1/2 cup fresh or high pulp orange juice
Topping
  • 1/2 cup sour cream & 1/2 cup powdered sugar, mixed
Directions
  1. On low heat saute bananas in butter.
  2. Combine brown sugar, orange juice and pour over bananas.
  3. Simmer until tender.
  4. Bananas will will appear"glazed" and will soak up most of the juice.
  5. Serve warm with topping.
