Carrot Bars with Cream Cheese Icing
Ingredients
- 3/4 cup vegetable oil
- 1 cup golden brown sugar
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 cups flour
- 1/4 tsp salt
- 1/2 tsp allspice
- 3/4 cup raisins
- 1/2 cup chopped walnuts
- 1 1/2 cups grated carrot, about 2 or 3 medium
- Cream Cheese Icing
Directions
- Cream oil and sugar until smooth. Beat in eggs and vanilla. add remaining ingredients, stirring until smooth.
- Pour into greased 13x9-inch baking pan.
- Bake in 350 degree oven 30 minutes or until a pick inserted in center comes out dry.
- Cool, then spread with icing.Cut into 24 bars.
Cream Cheese Icing
- Beat 3 oz. cream cheese with 2 tbls butter until smooth.
- Beat in 1 cup powdered sugar, 1/2 tsp vanilla and enough milk to make icing smooth and spreadable (about 1/2 to 1tsp)
