French Strawberry Pie
Ingredients- 1 qt strawberries
- 1 cup water
- 1 cup sugar
- 3 tbsp corn starch
- 1 3 oz package softened cream cheese
Directions- Wash, drain and hull strawberries.
- Simmer 1 cup strawberries and 2/3 cup water about 3 minutes. Blend sugar, cornstarch and remaining 1/3 cup water. Add to boiling mixture. Boil 1 minute stirring constantly. Cool.
- Spread cream cheese over bottom of cooled baked pie shell.
- Save about 1/2 cup of the best berries. Put remaining berries in pie shell. Cover with cooked mixture.
- Garnish with 1/2 cup berries. Refregerate until firm, about 2 hrs. Serve with whipped cream or Ice cream.
